Pumpkin Bread/Cake

Try this delicious, moist cake for your Thanksgiving celebrations. Use the provided blanks to make notes if you want to make a half or double recipe.

Ingredients:
2 cups sugar __________
1 cup oil __________
4 eggs __________
2 cups flour __________
2 tsp. baking soda __________
2 tsp. cinnamon __________
½ tsp. ginger __________
1 tsp. baking powder __________
½ tsp. salt __________
2 cups pumpkin puree __________
½ - ¾ cups chopped pecans __________

Preheat the oven to 350°. In a large bowl, mix the sugar, oil and eggs, beat well. In a medium bowl, sift together all the dry ingredients. Add the dry ingredients, a little at a time, to the wet mixture, stirring well. Add the pumpkin and the pecans, mix well.

Pour into a greased 13 x 9 baking pan. Bake for 35-40 minutes, or until the center is done. When cool, cut into squares. Alternatively, leave it whole and frost with cream cheese frosting, then serve.
